Chell and I are using Mint mobile and are on the same plans but somehow she used over twice as much data as I have.
She used so much that I had to put her on an unlimited plan.

How the fuck is this possible?
She can't figure out how to plug in her phone charger half of the time.
You telling me she has been torrenting movies on the bitch?

The only thing I can figure is that it is the scourge of society Apple products aka Iphone XR she got last month.
I mean they don't even pay their sweatshop workers.
I really wouldn't be surprised if Apple purposely eats up extra data because some hands got shook behind the scenes and there is some illegal agreement for their products to waste data like no other so that they can rob their customers even more than their employees.

Her phone is probably mining bitcoin piggybacking off your network because she downloaded a flashlight app virus

Maybe one phone is using the wireless card on the other phone and also the network data at the same time.

    not illegally

you agreed to the phone's gay telemetry systems and multiple apps' tracking data in various licenses.

some apps even video record what you do on your phone for 'marketing purposes' and send the stream back home

though if you're streaming video on both phones, services like Netflix try to determine the best bitrate to send you based on a number of factors including the actual device - if her phone has a significantly higher resolution screen than yours, it's likely that she's getting higher-bandwidth video even if you watch the same things

The moment you show a tit or a nut, it goes into immediate action and tapes everything and sends it all back to the home base.
