Or is Gentoo the only distro you've tried?
Anyway, it does turn out I'm too dumb to deal with a modern BIOS. back in the day you'd just say "hey boot from this usb drive, or if nothing is there boot from the hard disk". now I have to modify the boot order every time I restart. Something UEFI something... I don't get it at all. -

Ok, alright. Generally speaking you want to limit the utilities available on your *Nix box if you're running a server, for security reasons. Unless you're min-maxing on security it doesn't really make a lot of sense to me, especially since you said you want to run everything on a shell script. -
