Hypothetically, I obtain access to a subjects physical computer(most likely laptop with wireless card), remove their hard drive, and replace it with another hard drive containing an operating system that could do the following.
Upon boot, immediately connect to a wireless router that I have placed near their location. Immediately, load just like their system would, including any initial password screen for encryption. Everything would look identical to their actual OS. All of this would be obtained by booting their OS and getting as far as I could before stopped by password prompts.
Collect any keystrokes and mouse movement and relay that via the wireless connection back to another computer(which is in a remote location of mine) that has their actual hard drive and OS loaded up.
Immediately, relay everything that is happening on their actual OS back to their computer. Most likely VNC, but without them knowing.
Is there anything like this out there?

the only way I can think of setting up remote access preboot would be to load their harddrive as a VM and set up the hypervisor to relay the machine state to the remote computer

definitely, I'll find some examples later.
that said I don't know if there's anything that will run it covertly, ie. pretending the OS is running on the local machine and NOT just a stream from a remote VM. you might need to write your own client and attach it to a very minimal lunix boot
