They still use some of the same sites/apps. They get banned but people just use VPNs. You can also access Chinese internet by using a Chinese VPN. Baidu results are different for Chinese IPs which is interesting. If you want to test it, try searching on Baidu for Tianamen Square (in English) on both a Chinese and US VPN.
personally I use HelloTalk to talk to Chinese people or people from all over the world. its great -
