Well that's the interesting part though, it wasn't considered rough around the edges back in the day but the reason wasn't the polycount, it was that conventions we're different.
For example one thing I noticed while playing games from around the time of Thief 1, Project IGI etc is that nowadays most games have extremely "streamlined" input design that is optimized for controllers. Whereas back in the day PC games just had 1 dedicated button per everything. This has kind of lead to a handful of common design conventions for games, where the mechanics might feel different but generally most games have the same basic "feel" and breadth of options.
In some ways that's a good thing (you pick up any 3rd person shooter, you will likely know how to play it). In others it sucks (every game feels somewhat limited and the same).
That's what I really like about old games with some level of what's now considered jank or extravagant design, they really feel like playing a whole new game.
Being pretty cool at sucking dicks is a challenge itself.

Vice City needs a proper remake, not another shitty remastered or port. The game shows its age in a lot of aspects. Same thing with San Andreas tbh but San Andreas has enough depth on its own that you can get past it in short time
Being a professional creative has far more to do with systematic and consistent artistic output than anything else. It requires a lot of hard work, discipline and professional savvy. If you're making a living at a creative field, you're probably pretty cool.
